Thanksgiving Breakfast at Lake Anna… before the day’s celebration

There are many ways of celebrating Thanksgiving, including large buffets for family and friends, intimate formal dinners and large country lunches.  But before the actual dinner, why not enjoy a romantic breakfast for two by the lake.  Put on your scarves, coats, hats, and mittens.  Sit by the lake and reflect, all that you have to be thankful for before the hustle and bustle of the holiday season officially begins.  You can even make this one of your new holiday traditions.  Just take a moment to relax and enjoy the brisk cold weather while sipping either hot coffee or a smooth mimosa.   You may even have a fisherman glide by in his boat trying to add to his family’s Thanksgiving feast.

 

Your breakfast table could consist of a beautiful flower arrangement, monogrammed linens, lake accents, and a path leading towards your table made up of leaves from trees in your back yard. 

 

The table in this particular lake setting includes flowers made up of Orange Gerber Daisies, Curiosa Roses, Rouge Baiser Roses, Kangaroo paw and Hyperrcum.  The table linens featured were monogrammed by Toni’s Design studio located in Centreville, VA.  The linens include drink coasters with the words Blessings and Thankful monogrammed on them, to celebrate the season. But let’s not leave out the black polka dots added to white linens, and of course the Champagne bottle with the words Lake Anna wrapped around it.  You could also include beautiful ribbons with polka dots and fall colors to accent your table.  The martini glasses are accented with green crystals and the dinner plates have rich chocolate brown accents.

 

But most importantly, pick some special breakfast foods to compliment this special romantic morning. Chez Amis Bed & Breakfast in Annapolis, Maryland had a few suggestions, from owners Mickie and Don Deline.  They suggested Caramel French Toast, or Croissant Steigler as your entrée, then Flower Pot Apple Muffins and two fruit dishes–My Blue Heaven and Blueberry Bird’s Nest.  Their recipes are included below.

Caramel French Toast

The night before (this amount for 8 dishes)

Melt 2 sticks of butter with 1c brown sugar in a saucepan, stirring constantly.  When sugar and butter are smooth, and 1T brandy 9or rum) flavoring, 1t vanilla, and 2T maple syrup.  Divide sauce into 8 greased individual baking dishes.

 

Top sauce with one slice of cinnamon swirl or apple Danish bread (thick sliced).

 

Mix 6 eggs and 1 1/2c milk and ¼ salt.  Divide evenly over dishes of caramel stuff and bread

Refrigerate until morning

 

Bake uncovered at 350 for about 45 minutes. (lay a piece of foil over if they’re getting too brown

To serve, simply turn upside down on a plate.  The syrup will still be a bit runny… and is certainly sweet enough so you don’t have to put syrup on the table. Serve with crisp bacon and one:

 

“Tally Ho”

Grease muffin pan

Line each cup with one or two slices black forest ham (depending on thickness)

Crack one egg into each cup

Top with grated cheese

Sprinkle with salt and pepper and chives

Bake at 350 for 15 min until yokes are not runny

 

Croissant Steigler

Grease individual baking dishes

In each place one splitcoctail croissant, open. (Half if they are large)

On top of croissant place slices of ham, havarti (or Monterey jack) cheese and handful of grated cheeses

Mix per person: 1 egg and 1/4c milk, salt, pepper, and chives.  Plus more eggs and mild to fill the dish.  9for 4 people ,we use 6 eggs and 1 1/2c milk)

Pour the egg/milk mixture over the croissant and top with a slice of provolone.  Cover and refrigerate overnight

 

Bake at 350 for 40 minutes, or until puffed and golden brown

 

This is delicate, light, fluffy egg dish.  For those who don’t eat meat, simply leave it out… won’t hurt the taste.

 

Flower Pot Apple Muffins

3c flour

2c sugar

1/2t salt

1t soda

2t cinnamon

2 eggs

3/4c oil

1/2c orange juice

2t vanilla

3c chopped apples (about 3 large)

Mix flour, sugar, salt, soda, and cinnamon. Stir in 2 eggs, oil, orange juice and vanilla.  Mix well and then stir in apple chunks gently.

 

We use 12 baking “flower pots” (from LL Bean store)—grease them, pour in batter, bake 30-35 min at 350

 

You can also bake in a 9x13 inch pan for about 60 min

 

My Blue Heaven

Mix together until well blended:

1/4c butter

1 egg

1/2c sugar

1 ½ c oatmeal (quick or old fashioned)

1t baking powder

1t salt

1/2c milk

1t vanilla

1/8c oil

2t cinnamon

 

Grease a glass bread pan. Pour in mixture. Bake uncovered at 350 for 35-40min. (can be baked immediately, or after being refrigerated overnight.)

After baking divide into dishes, sprinkle confectioner’s sugar over mixture then top with fresh blueberries (or strawberries, or raspberries, whatever you have).  Serve with heavy cream, not whipped. Best warm.  Rich and delicious

 

Blueberry Bird’s Nest (or Raspberry)

Whip cream; add confectionary sugar and rum or vanilla flavoring.

Put a dollop on a plate and make indentation (so it looks like a nest) with a small ladle.  Put blueberries or raspberries in to be the “eggs”
